    Brisket is taken from the breast section of the cow, just below the chuck (shoulder area). It's one of the primal cuts of beef and is a large, flat cut that consists of two parts: the flat (or "first cut") and the point (or "second cut"). The flat is leaner, while the point is more marbled with fat.
